Jeg elsker banan og jeg elsker chokolade. Derudover elsker jeg også muffins. Inden jeg blev veganer, lavede jeg de bedste banan-chokolade muffins og jeg lavede det hele på slump. Men efter jeg blev veganer, har jeg bare ikke fundet en opskrift som skrev at det var mine muffins! Men den tid skulle stoppe, for i dag havde jeg en sød tand efter lange gåture, og der skulle hygges MAX med min ældste søn. Så jeg skulle lave muffins og YUMMY!

  1. Tænd ovnen på 180 grader
  2. Bland alle de tørre ingredienser i en skål
  3. Tilsæt olie og sojamælk med vanilje og rør sammen med de tørre ingredienser
  4. Mos de tre modne bananer med en gaffel og tilsæt i dejen
  5. Hak halvdelen af chokoladen og vend i dejen
  6. Tilsæt dejen i muffinforme – da dejen hæver, så husk kun at fylde 3/4 dele af formen op
  7. Bag muffins i 20 min til gyldenbrune i toppen
  8. Resten af chokoladen smeltes i vandbad og bruges som pynt. Der kan tilsættes lidt sojamælk for bedre konsistens
  9. Skær den sidste banan i tynde skiver og brug som pynt. Brug chokoladen som “lim”

Min søn var meget glad for at der var en smule dej i skålen, som han kunne slikke af. Han godkendte dejen og senere blev de lækre muffins også godkendt!
